how to make it

This is really satisfyingly chocolatey! I find pepitas work better with the chocolate flavour than the originally prescribed linseed, but any ground seeds would probably work.

1/4 cup pepitas, ground
1/2 teaspoon baking powder
1 tablespoon sweetener (or sugar - I use Xylitol)
1 tablespoon cocoa
1 large egg
1 tsp coconut oil
3 tsp coconut cream

Mix dry ingredients in a coffee mug. Add remaining ingredients and mix well. Because of the extra liquid ingredients, microwave time increases to about 2 minutes (varies with individual microwaves).

Wash the mug immediately, as the residue is really hard to get off!

Also try adding goji berries, or sultanas, for a sweet burst.
