minute muffin - original

how to make it

A friend passed this recipe on to me, and I've been playing with variations ever since... Makes one muffin, but it's really quick, and surprisingly satisfying! As a breakfast, it easily keeps me going until lunch time.

1/4 cup linseed meal (I grind it fresh each time using a coffee grinder, as linseed goes rancid quickly. Grinding only takes a few seconds)
1/2 teaspoon baking powder
1 tablespoon sweetener (or sugar - I use Xylitol)
1 teaspoon cinnamon
1 large egg
1 tsp coconut oil

Mix dry ingredients in a coffee mug. Add egg and liquid coconut oil and mix well. Microwave for 1 minute (varies with individual microwaves).

Wash the mug immediately, as the residue is really hard to get off!
