how to make it

Pan fry the salmon and preheat another frying pan (with a little olive oil) while you slice the onion, ginger and veggies.

Flip the salmon after about seven or eight minutes. In the second pan, add some olive oil and stir through the ginger. Lay out the veg slices in the pan, seasoning as desired. Flip after a few minutes - add more oil if needed. Finally add the mint and serve.
