how to make it

Pre-heat oven to about 180 C.

Beat a couple of whole eggs and pan-fry. Coax into pieces (for spreading over the pizza) while they're cooking. Once finished, set aside for the moment.

Take any kind of flat, circular bread (lavash, mountain, pita, tortilla) and evenly spread pizza sauce over it.

Slice the mushroom and onions, and distribute over the pizza base along with the olives and crumbled fetta. Arrange the egg pieces over the top, and stick it in the oven for about 10 minutes. Sprinkle with chopped fresh parsley, and serve.

For a variation, mix grated cheese (I'd recommend parmesan for maximum flavour) in with the eggs before cooking them.
