how to make it

Lightly toast the bread, and briefly pan fry slices of tomato and zucchini.

Spread a thin layer of mayo on the toast, then arrange the grilled veggies and olives, and top with slices of parmesan. Stick it all under the grill for a couple of minutes, or until the cheese has melted and starts to become golden.

(No gluten if you use gluten free bread)
