how to make it

Preheat the grill to medium heat.

Pan fry the chicken while you chop the veggies and slice the avocado and cheeses. Once the chicken fillets are cooked, place them on an oven-proof tray. Slice a flap open across the top, place strips of camembert in the opening, then close. Place slices of the avocado on the top of the chicken, then cover that with slices of tasty cheese. Put this under the grill for a few minutes until the top layer of cheese melts across the avocado, holding it in place.

Meanwhile, steam or stir fry the veggies. Serve with garlic butter.

For a variation, use lightly cooked asparagus instead of avocado.
